Fitness Tip Friday: Taking it to the kitchen!

Today we are taking Fitness Tip Friday to the kitchen. The recipe is Paleo Fajitas! This is an easy recipe to make and eat throughout the week (aka: meal prep). I love to eat these over greens, rice (not paleo), sweet potato chips (when I'm feeling frisky), or spaghetti squash,

PS. This video was supposed to be a practice take, but I forgot and started pouring all my ingredients in the dish. WHOOPS!

Ingredients:

1 lb chicken (Cut into strips)

2 tsp oil

2 tsp chili powder

2 tsp cumin

1/2 tsp garlic powder

1/2 tsp dried oregano

1/4 tsp salt

1 (16 oz) can diced tomatoes

1 med. white onion, sliced

1 large bell pepper, sliced (or more if you like peppers)

Directions:

Pre-heat oven to 400

Place chicken strips in baking dish

Combine oil & spices in a small bowl

Pour ^ over chicken and stir to coat

Add veggies and stir

Bake uncovered for 20-25 minutes
